For a whole rack of lamb, we recommend using slow thawing in the fridge, to help maintain the texture of the lamb.

① Keep the original vacuum packaging intact
② Place in the refrigerator at approximately 0–4°C in advance
③ Let the rack of lamb thaw completely slowly
④ After unpacking, pour away excess meat juices
⑤ Pat the surface dry with kitchen paper
⑥ Then season and cook

💡 Is the vacuum-packed lamb colour darker normal?

The oxygen content inside the vacuum bag is lower, so the lamb may appear a darker red while packaged.

After opening the packaging and exposing it to air for a while, the meat colour usually changes gradually.

Therefore, you cannot simply judge lamb quality based on the depth of colour inside the vacuum packaging.
