New Generation Lemongrass Chicken Wings 454g | Hong Kong Made Frozen Marinated Chicken Wings

Product Introduction

New Generation Lemongrass Chicken Wings are pre-marinated with chicken wings, lemongrass, garlic, fish sauce, sugar, pepper and cooking wine, featuring a fresh lemongrass aroma, garlic scent and fish sauce savory taste.

Each pack has a net weight of 454g and can be cooked in an air fryer, oven, frying pan or barbecue grill after thawing. Suitable for family dinners, party snacks, bento, late-night snacks and outdoor BBQ.

Detailed Product Description

This frozen lemongrass chicken wing is manufactured in Hong Kong by New Generation Food Service Limited. The marinade uses lemongrass and garlic as the main flavors, combined with fish sauce, pepper and cooking wine, giving the chicken wings a Southeast Asian style savory taste.

The product is pre-seasoned, saving the process of handling and long marinating yourself. Simply thaw completely in the refrigerator in advance, then air fry, bake or barbecue directly.

The chicken wings themselves contain chicken skin and fat, making the surface more prone to a caramelized effect after heating. Since the marinade contains sugar and fish sauce, it is not advisable to use high heat immediately when cooking, otherwise the outer layer may easily burn black while the meat near the bone may still be undercooked.

Nutritional Profile Analysis

Protein

The label indicates 13.9 g of protein per 100 g of packaged product, which can serve as a source of meat protein in a daily diet.

If you wish to use nutrition claims such as 'high protein' or 'source of protein' in advertising, you should first verify them in accordance with the Hong Kong Labelling and Claims Regulations.

Total Fat

The label indicates 18.7g total fat and 4.8g saturated fat per 100g, so it should not be promoted as low-fat chicken wings.

The fat in chicken wings is mainly concentrated in the skin and subcutaneous parts. Air frying or grilling can allow some oil to flow out during cooking, but this cannot be used directly to make a low-fat claim.

Sodium

The label indicates 316mg sodium per 100g. The product contains fish sauce, so it is not recommended to add a large amount of salt, soy sauce or high-sodium sauce during cooking.

Calculated according to the label ratio, 200g of product contains approximately 632mg sodium, but the actual edible amount should deduct the bones and remaining marinade.

Sugar and Carbohydrates

The ingredients list sugar, but the nutrition label indicates 0g sugar and 0.5g carbohydrates per 100g. 0g may be the result of rounding according to labelling rules and should not be promoted as a 'sugar-free product'.

Air Fryer Method

  1. Place chicken wings in a refrigerator at 0 to 4°C to thaw completely.
  2. Remove packaging and gently pat excess moisture with kitchen paper.
  3. Preheat the air fryer to 180°C.
  4. Place chicken wings in a single layer in the air fryer basket, avoiding overlap.
  5. Air fry for approximately 18 to 22 minutes.
  6. Turn the wings over once during cooking.
  7. If you want a more caramelised surface, you can heat at 195 to 200°C for about 2 to 3 minutes at the end.
  8. Ensure the area near the bone is cooked through.

Different air fryer power levels and chicken wing sizes will affect cooking time; you should judge by core temperature rather than just minutes.

Oven Method

  1. Preheat the oven to 200°C.
  2. Place thawed chicken wings in a single layer on a baking tray or wire rack.
  3. Bake for approximately 25 to 30 minutes.
  4. Turn the wings over once during cooking.
  5. Finish by broiling on top heat for approximately 2 to 3 minutes.
  6. Serve when the surface is golden yellow and the meat near the bone is fully cooked.

Using a wire rack allows hot air to circulate from the bottom of the chicken wings and allows some oil to drip into the tray.

Pan-frying Method

  1. Pat the surface of the chicken wings dry after they are completely thawed.
  2. Add a small amount of cooking oil to a frying pan and heat over medium-low heat.
  3. Place chicken wings in the pan and fry for about 6 to 8 minutes on each side.
  4. Turn them occasionally during cooking to prevent the marinade from burning.
  5. You may cover the pan for a few minutes to help heat the area near the bone evenly.
  6. Fry the surface until fragrant with the lid off at the end.
  7. Ensure the meat is fully cooked before serving.

BBQ Grilling Method

  1. Chicken wings must be thawed completely first.
  2. Place them first in the indirect heat area, further away from the charcoal fire.
  3. Use medium heat to cook slowly.
  4. Turn them over every few minutes.
  5. Move them to the direct heat position to char only when they are almost cooked.
  6. Avoid fat dripping into the charcoal fire which can produce large flames.
  7. Remove severely charred parts before eating.

The marinade contains sugar and is easily burnt by prolonged direct contact with fierce flames.

Food Safety

Lemongrass chicken wings are a frozen raw chicken product, not a ready-to-eat food. The area near the bone of chicken wings is harder to heat, so it must be confirmed that it is fully cooked.

The Centre for Food Safety recommends a food core temperature of at least 75°C and maintaining it for 30 seconds. The thermometer should be inserted into the thickest part of the chicken wing, but should not touch the bone directly; the meat juices should be clear and there should be no blood or pink raw meat when cut.Centre for Food Safety Cooking Guidelines

When handling raw chicken wings:

  • Use different knives, chopping boards and tongs for raw and cooked food.
  • Do not put cooked chicken wings back on the plate that held the raw chicken wings
  • Wash hands immediately after contact with raw chicken.
  • Clean work surfaces and utensils that have come into contact with raw meat juices
  • Avoid raw chicken juices coming into contact with salads or ready-to-eat foods

Thawing and storage instructions

  • Store at -18°C or below.
  • It is recommended to keep them sealed and place them in leak-proof containers
  • Place in a refrigerator at 0 to 4°C to thaw
  • Do not thaw at room temperature or in hot water for long periods
  • After thawing quickly with cold water or a microwave, must be cooked immediately
  • Cook and consume as soon as possible after thawing.
  • Avoid repeated thawing and refreezing.
  • Best before date is based on the actual packaging.

The Centre for Food Safety of Hong Kong recommends thawing larger raw meat and poultry completely first to avoid the outer layer being cooked while the inside remains raw. Frozen Food Handling Guidelines
